My daughter recently got married and we had an open house for her here at our home. We enjoyed planning the food and decorations and I think it went very well! One of the yummy treats that we made was these homemade cream cheese vanilla mints and everyone really enjoyed them.
I had made these a long time ago, but I thought they would be perfect for the reception, so we made it a family activity and got an assembly line going to create these mints! They are very simple to make, but take a little bit of time, since you have to make each one individually.
When they are done, they dry out a bit and get a bit of a crunch on the outside with the sugar they are rolled in. But the center stays soft and creamy and so good! I was going to just make these a mint flavor, but my husband suggested adding the vanilla bean flavoring in, too, and it gave it a softer, richer taste that was perfect!
You can add food coloring if you like, but since these were for a wedding, I just left the food color out and they turned out an ivory color that was very pretty and the sugar on the outside made them sparkle.
Cream Cheese Vanilla Mints
1 3 oz. package cream cheese, softened
1 tablespoon butter, softened
3 cups powdered sugar
3 drops peppermint oil
1/2 teaspoon vanilla bean paste
Directions:
1. In food processor, place cream cheese, butter and powdered sugar. Cover; process, using on-and-off pulses, until mixture comes together into a ball. Add mint and vanilla; process just until incorporated.
2. Place dough on work surface sprinkled with additional powdered sugar. Roll dough into small balls, then roll in sugar and press into the silicone mold. Pop them out and place on waxed paper.
3. Let stand 2 hours or until dry on one side, then flip over and dry two hours on the other side. Store in freezer until ready to eat.
